There is a book out, by Dr. Timothy S. Harlan, called, Cooking To Reduce The Burn.
I'm fortunate not to have problems along this line but thought some recipes could help another:
Cashew Chicken Serves: 4 Prep: 10 min Cook: 35 min
1/4 tsp salt 1 cup uncooked jasmine rice 2 tsp dark sesame oil 1 medium onion, diced 1 clove garlic, minced 1 # boneless, skinless chicken breasts cut into strips 1/2 cup raw cashews 1 Tbsp minced fresh ginger 1/2 cup nonfat chicken broth 2 Tbsp lite soy sauce 1 Tbsp maple syrup 1 cup frozen shelled edamame (soybeans), thawed
1. In medium sauce pan, bring 2 cups water and salt to a boil. Stir in Jasmine rice. Reduce heat to medium-low and simmer, partially covered, for about 15 minutes or until tender. (Do not boil away all liquid; do not stir rice.) Remove from heat, cover and let stand.
2. While rice is cooking, place 1 tsp of the dark sesame oil in a large nonstick skillet. Add diced onion and cook gently stirring occasionally until translucent. Remove to a bowl and set aside. Add the remaining sesame oil and minced garlic to the skillet. Cook gently for about 5 minutes until soft. (Do not let the garlic brown.)
3. Add chicken, cashews and ginger. Cook, stirring frequently until outside of chicken has cooked.
4. Stir in broth, soy sauce and maple syrup. Add onions back into the pan and cook stirring gently for about 5 minutes.
5. Add the thawed edamame and cook for another 5-8 mins, stirring often, until chicken is cooked through. Serve over rice.
Per Serving (1 1/2 cups over rice): 527 cal. 40 g pro, 55 g car, 5 g fib, 16 g fat (3 g sat fat). 27% cal from fat, 66 mg chol, 573 gm sod

I've never seen raw cashews. Since they are going to be cooked, I wonder if the addition of cooked cashews sprinkled over the dish just before serving would work as well.
