I have been on a veggie kick lately and have been mixing canned whole kernal corn, french style sliced green beans, sliced carrots and chopped onion which I saute in sunflower oil (I did add some sliced fresh red bell pepper but am now out of that)and will cook up this dish for dinner tonight with the rest of the canned veggies. I have a Banquet dinner for one of Spaghetti and Meatballs (frozen) that I microwave to defrost. Cut up the meatballs and dump it all into the sauteed veggies and heat for a while. I would add mushrooms if I had any cause they taste good in this mix. Maybe I just crave veggies but I like this dish very well. My wife and daughter say it is ok but not really great to them. Like say I like it and I think it must be pretty healthy to eat. Does it sound good to you? Oh and I add a pat of butter to the veggies while cooking.
Another thing I like is sliced french bread buttered on both sides. Toast the first side and turn over and sprinkle mozzerela cheese on the toasted side while it is hot to let melt. Really tastes good. Been thinking of substituting the 3 or 4 type shredded cheese instead of the mozzarella cheese. That may be even better.. Paul
Sounds good to me, but I prefer frozen corn and beans to the canned. The supermarket here has a (house brand) frozen mix of baby corn, green peas, mushrooms, pearl onions, and carrots which is also good.
I think frozen is good for stir fry as is fresh but as just a side dish I like the flavor of canned and its texture. I kind of gave up on the baby corn as I get an occassional piece with flavor I don't like. I'll have to look for that frozen mix though, it does sound good. Paul
