I know thisz is not specifically a wheelchair topic, but my stroke-induced left-side hemiplegia put me in a wheel chair and took the use of my left hand as well. This makes it difficult for me to use a knife to cut my food. A paraplegic OT of mine recommended a rocker knife, the curved blade of which allows for one-handed cutting of food. The one I have is quite sharp, and allows for a quick and sure cut. I take it whenever we go to a restaurant and I don't have to feel like a child asking someone else to cut my food for me.
