One site I evaluated had the same concerns. I requested clarification from SEDBTAC and this was her reply:

Instead of scripting the replacement of the whole email address, use JavaScript to replace the @ symbol with the words “at”. This way if someone has JavaScript turned off, then the email address will be seen, and even better heard, as how it would be read. Note that if this is being done to eliminate spam, it is not likely to happen because if spam is already being received, then the email addresses are already on a “list”, which are then sold to other spammers for money. Efforts should be made to reduce spam but not at the expense of ready access for valid users.

I used to always make my email something like NOericaSPAM@gmail.com OR EricaREMOVE@MEgmail.com and then just put note next to email saying to remove the words NO SPAM from email address or whatever words I used ..... but of course many people would forget or not see note or many other things & it was a pain in the butt to do it this way anyway...... so I like the way you mentioned: erica AT gmail dot com
I heard of people doing this before but completely forgot about it..... I always think everything that we do to deter spam will only last so long before the spammers figure out ways to make thier little bots read these alternate ways too.....hopefully that will take awhile though... ::::sigh::::

Good question MerryA! ..... a lot of people don't like java or cannot use it also....
I wonder if you have no java will it show email address like normal or can they just not email you at all?? hmmmmmm I didn't read the whole page so I don't know if it addressed this issue.
